Egyptian Hama Mahshi (Stuffed Squab) with Molokia Soup (Green Soup)

This classic Egyptian Meal suits casual family meals as well as is great for entertaining. These two dishes are often made together, because the broth created from cooking the pigeon (squab) is the perfect base to flavor the soup.

Hamam Mahshi Stuffed Squab

Ingredients

  • 2 Squabs – whole
  • 1 cup Freekeh – Egyptian rice
  • 1 TBS Ghee
  • ½ Onion – chopped
  • 4 Garlic cloves – minced
  • 4 Bay leaves
  • 4 Cardamom pods

Directions

Stuffed squab

  • Soak Freekeh in water for 30 minutes
  • Add Freekeh to a pan and add ½ cup very hot water. Cook until water evaporates.
  • Remove any excess water and fry Freekeh in a pan with ghee.
  • Put aside to cool.
  • Prepare the squab, rinse, clean, remove intestines and other unneeded parts. Salt and pepper the squab.
  • Bring two cups of water to a boil in a cooking pan. Add onion, garlic, cardamom, and bay leaves.
  • Stuff the squab’s cavities with the freekeh. Close with toothpicks.
  • Place the squab’s right side up in the pan with the boiling water.  Cover with a lid and cook for 1 hour. Turn after 20-30 minutes.
  • Make sure squab is fully cooked by either checking with a fork or checking the internal temperature. Remove the squab from the pot.
  • Fry the squab in olive oil to make the skin a lovely brown.

Molokhia (Green Soup)

  • Molokhia frozen soup mix
  • 1 TBS Chicken Spice
  • 2 Garlic Cloves – Chopped
  • 1 TBS Ghee

Making the Green Soup

  • Drain the broth from cooking the squab.
  • Put 1 ½ cups of the broth into a pot to boil.
  • Add the defrosted Molokia soup mix and stir.
  • Add salt and pepper to taste.
